Description

Nothing like a slice of banana bread on a Sunday morning. I make this with our 4 year old he loves to mash the bananas and add the cinnamon. 

Ingredients

  • 2 c all purpose flour
  • 1 t baking soda
  • 1⁄4 T salt
  • 1 t pure vanilla extract
  • 1⁄2 c unsalted butter
  • 3⁄4 c brown sugar
  • 2 eggs
  • 2 1⁄2 c over ripen banana's
  • ds cinnamon

Instructions

Preheat oven to 350 & lightly grease a 9x5 inch loaf pan set aside.

In a large bowl, combine flour, baking soda, cinnamon and salt. In a separate bowl or a electric mixer, cream together butter and brown sugar. Stir in eggs, vanilla and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 15 minutes, then turn out onto counter or a wire rack

Notes

Don’t underestimate the power of cream cheese. We swear by it.
